Ingredients

FOR THE BATTER
  • 40 sage leaves
  • 100g flour
  • 200ml beer (cold, from the fridge)
  • salt to taste
FOR FRYING
  • 1l sunflower oil


Preparation

Wash the sage leaves well under running water and then dry on kitchen paper.
Place the flour in a bowl and add the beer a small amount at a time. Whisk until a smooth lump-free batter is formed, then add salt to taste.
Dip the sage leaves one at a time into the batter, making sure they are completely covered.
Heat the oil until a temperature of 170°C is reached, using a kitchen thermometer. .
Fry the leaves a few at a time until golden brown. Drain on kitchen paper, add salt if needed and serve immediately.
