  • 1 ¼ ounces white Cuban rum (equal to 37.5 ml)
  • 2 teaspoons of white cane sugar
  • 10 leaves of fresh mint
  • 1 lime
  • Ice cubes as required
  • Sparkling water as required


Cut the lime in half and then one of the two halves into quarters to obtain four small wedges. Add them to the sugar in a tall glass and using a pestle, crush to dissolve the sugar.

Then add the 10 mint leaves and mix them delicately with the sugary juice without crushing (otherwise the cocktail will be bitter).

Fill the glass with crushed ice, add the rum and, lastly, a splash of sparkling water. Stir and serve, decorating with a sprig of mint.
